Whata Weekend

Howdy!
I hope you had an awesome weekend and are enjoying your Monday so far! My weekend consisted of a series of unfortunate events. It felt like a chapter straight from Lemony Snicket.
Namely, my poor little Jeep’s radiator blew out. For the past two weeks, she’s been in a repair shop, getting her AC fixed (yes…my car is a she! Her name is Goldie Mae). I only had her home for 3 days when all her radiator fluid began to gush out of the engine, onto my driveway. It’s as if she was crying. Poor thing! Hopefully I can get her fixed up soon.
But Saturday turned out to be much nicer. My mom and I had dinner at Jason’ s Deli. I always forget how much I LOVE their salad bar.

On Sunday we were busy bees. Church, cleaning out the garage (which is a BIG task for my Papa) and then headed over to my Grams’s for dinner. I love to go over to her house for dinner because she always makes a healthy meal that tastes good. Just check out may plate!
Farmer’s market lettuce with dried cranberries, watermelon and baked rosemary chicken. For dessert, Grams baked a Pavlova dessert, filled with fresh strawberries and homemade whipped cream. IT WAS FANTASTIC! There is nothing better than strawberries in the summer.
I also brought over a [healthy] cookie cake I baked using this recipe from Chocolate-Covered Katie. The secret ingredient in here? Beans! My family was so surprised when I told them the mystery ingredient. Especially since it tasted like warm, gooey cookie dough. We all approved
So this weekend had a few lows but definitely a lot of highs. And that is what counts! I was also able to get in 15 miles this weekend (blowing off some steam!) so I am pretty darn close to completing my 100 Mile Challenge!
