Perfect Peach Cobbler

After an awesome weekend at the lake with my best college friends, I came home last night to a house without power. This weekend it got up to 105 degrees, and the transformer on our street blew because of all the energy the houses use to cool us down! By the time the transformer was fixed it was past dinner time and I had already moved on to ideas of dessert. With 5 fresh, local peaches, it wasn’t hard to decide what to whip up.
Perfect Peach Cobbler
- 5 peaches, cut into slices
- zest and juice of half a lemon
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 cup water
- 1 cup Sucanat or white sugar
- 1 stick butter
- 1-1/2 cups whole wheat flour
- 2-1/4 tsp. baking powder
- 3/4 tsp. salt
- 1 cup sucanat or white sugar
- 1-1/2 cups milk of choice
- Preheat oven to 350 degrees.
- Stir peaches, lemon juice, zest, cinnamon and nutmeg together.
- In a saucepan, bring sugar and water to a simmer. Add peach mixture and simmer for 2 minutes (be sure to stir!). Remove the peaches and syrup from the stove and set aside.
- Place the stick of butter in a 9 x 9 baking dish and set in the oven to melt.
- In a separate bowl, combine flour, baking powder, salt, sugar and milk together to form a batter.
- Pour batter directly into the 9 x 9 pan that now contains melted butter. Don’t mix the batter into the melted butter!
- Spoon the syrup and peaches into the batter. Again, don’t mix the peaches in the batter! The peaches will sink down by themselves!
- Bake 50 minutes. Enjoy!!
Add a scoop of vanilla ice cream to top it off. Warm peaches, crunchy crust, gooey inside. YUM!
