How I Eat Tomatoes

It’s hard to talk about how I eat tomatoes, because I HATE TOMATOES. Actually, I just hate raw tomatoes (remember this post?). But I love ketchup, spaghetti sauce & tomatoes soup. Weird, huh? I think it is the squishy texture that I can’t get around. But yesterday, my next door neighbors Jim and Jennifer shared a few other their favorite healthy tomato recipes with me. First up, salsa.
It was simple.
It was smooth (keyword: smooth, so the tomato texture was no overwhelming).
And the best part, it was spicy!
Jim’s Salsa
- 1 can petite diced tomatoes
- 1 can tomatoes and green chiles (like Rotel)
- 1 small or 1/2 a large yellow onion
- 1 & 1/2 Tbsp. Jalapenos
- 1/2 tsp. garlic salt
- 1/2 tsp. cumin
- little bit of sugar if you want to tone down the spice (I omitted)
First, blend the jalapenos and chopped onion in a large food processor.
Next, add the three cans of tomatoes and blend until smooth. Then sprinkle in the spices and pulse a few more times to mix in.
Let the salsa sit for at least a day so the spices and flavors can do their thang
Enjoy with chips and try not to eat it all in one sitting!
My salsa chip of choice: blue corn tortilla chips! YUM!

You and I feel the EXACT same way about tomatoes. I eat ketchup on everything, and salsa is god-sent, but I hate tomatoes by themselves.
